Hi Mom, I wanted to share this recipe with you. I hope your kids love it as much as mine do!
Baking breakfast recipes with my kids is one of our favorite Saturday morning traditions. We sleep in, gather around the counter, we stir, we mix, we add, we taste, we get excited about our morning meal. And it’s always way more fun when that meal includes some of our favorite flavors, like butterscotch!
Whole Wheat Banana Butterscotch Waffles
Two kid favorites—bananas and butterscotch—in a family favorite waffle. The bananas make these extra moist, and whole wheat flour makes Mama feel less guilty about adding the butterscotch chips. You can make big waffles or small waffles…whatever your family likes best. And once you drizzle maple syrup on top…yum. Your kiddos will flip over these guys!
This recipe will yield enough batter for four big Belgian waffles or eight smaller waffles.
INGREDIENTS
2 cups whole wheat flour
2 teaspoons baking powder
Salt
2 tablespoons sugar
1 cup milk
1 egg, lightly beaten
2 bananas, mashed
1 cup butterscotch chips
Maple syrup for drizzling
DIRECTIONS
Preheat the waffle iron. Lightly coat the surface with cooking spray
In a large mixing bowl, combine the flour, baking powder, salt, and sugar with a whisk. In a second large mixing bowl, combine the milk, egg, and mashed bananas.
Slowly whisk the wet ingredients into the dry ingredients. Combine but do not overmix. Once everything is combined, stir in the butterscotch chips.
Ladle the batter into a hot waffle iron and bake to your liking.
Remove and serve with your favorite maple syrup
