BBQ Apple Chicken Sandwiches

I just adore a slow-cooker meal that is super simple and waiting when I’m ready to eat. Apples, onions, and slow cookers are staples at our house in the fall! The apple juice adds sweetness to the dish without being overpowering, and the chicken cooks up juicy and tender.

Ingredients
1 pound boneless, skinless chicken breasts, frozen or thawed
2 cups apple juice or cider
1 (16 ounce) bottle BBQ sauce
1 onion, sliced and sauteed (optional)
Toast, burger buns or rolls to serve

Directions
In your slow cooker, combine chicken, apple juice or cider, and entire bottle of BBQ sauce. Cook on low 6 to 8 hours or on high 3 to 4 hours. When dinner is ready, remove chicken and some sauce from slow cooker into a bowl. Shred chicken with two forks (add in a little more sauce if needed). Serve shredded chicken with sauteed onions (optional) on top of your favorite bread.

    I love making enchilada soup in my crockpot! It is mostly cans and some chicken breasts so it is super simple, but tastes so good! 1-2 lbs chicken, enchilada sauce, black beans, corn, tomatoes. Cook for six hours or so!

      Oops – forgot the chicken broth – 2 cans chicken broth, otherwise it wouldn’t be very soup-like! 🙂

    I am all about comfort food in a crockpot. Some of my favorites are pot roast, chili and beef stew. They warm me up on those super chilly days.
