Hi Mom,

In my opinion, butterscotch is that secret ingredient that everyone loves but doesn’t use enough. This gooey little cake cooks up in the slow cooker and then makes the perfect dessert for any occasion. Who knew you could bake cakes in the slow cooker?

Gooey Butterscotch Cake
This recipe serves four to six.

INGREDIENTS

1 box yellow cake mix
1 (8 ounce) container sour cream
1 egg
1/2 cup water
2 cups butterscotch chips, plus a few more for garnish
Butterscotch ice cream topping to drizzle

DIRECTIONS

Spray your slow cooker liberally with cooking spray. Then, in a mixing bowl, combine the cake mix, sour cream, egg, and water with a wooden spoon. Spoon this layer on the bottom of your slow cooker. Next, sprinkle the butterscotch chips across the top. Cover and cook on low for 2 to 3 hours. Remove from slow cooker and serve with a drizzle of butterscotch sauce and a few more butterscotch chips.

    One of my favorite recipes for the crockpot is Pork Carnitas. It’s a freezer meal that can be put together ahead of time and then thawed before putting it in the crockpot.

    My favorite recipe is also the easiest. Add a 2-3 lb beef roast on bottom, then mix together 1 packet of onion soup mix, 1 packet of brown gravy mix, and 1.5 cups of apple juice (or half water, half juice). Pour over roast. Cover and cook on low for 7-9 hours. It makes an amazingly tender and delicious roast!

    I love cooking a whole chicken in the crockpot. I can usually find them marked down and I take them out of their packaging and prep them in a freezer bag with seasoning. No need to dethaw, and I add potatoes, sweet potatoes, carrots, onions and celery. Makes a delicious, healthy and fancy looking dinner with hardly any work. After dinner, I strip the extra meat off the bones and fill the crockpot to the top with water and more veggies and let it cook all night for bone broth stock. You can use it for chicken soup the next day, or freeze it for future recipes. So good for you!

    Looks delicious! My favorite is to put a whole chicken in the crockpot with a cut up lemon and onion inside, a few seasoning sprinkled on top and a cup of water or broth in the bottom. 6-8 hours later on low you have a tender, moist chicken and the beginning of a great stock!

    My mother in law bakes her bread in the crock pot, but I’ve never heard of crock pot cake too! She’ll be delighted 😉 My favorite thing to make is beef roast with potatoes and carrots! Add some cream of chicken soup, water, salt, pepper, and some beef bullion or Au jus mix and forget about it for 8 hours! Yum!

    I’m the easy dump crock pot kind of mom and my go to recipe is a jar of my favorite salsa and chicken in the crock pot it’s super easy and versatile (we can have many different sides or even shred it for tacos !

    Favorite and easiest: pulled pork BBQ sandwiches. Just plop some country style pork ribs and lots of BBQ sauce, few hours later have sandwiches. If you want go to the extra mile and separate with a fork or put in a mixer to shred.

    One of my favorite crock pot recipes is Sweet potato Black Bean Chili, french toast is also very yummy in the crock pot – I didn’t realize how much you could cook in one though never tried cake but looks yummy

    My favorite crock pot meal is salsa chicken: 3-4 chicken breasts, 1 can black beans, 1 jar salsa, 1 can corn, 1 can diced tomatoes with chili’s. Dump it all in, shred chicken when cooked. Eat plain, top on a salad or eat on a tortilla!

    I love to cook a whole chicken in my crockpot. Its so easy! Then I run it overnight for homemade stock from the bones.
