Hi Mom, happy St. Patrick’s Day! I was taking dinner to some friends and wanted to include a little dessert. So I took out a box of pudding, some mini graham cracker crusts, and my good old Irish Cream coffee creamer and whipped these up. For this recipe, you can use one 9-inch graham cracker crust or 6 mini ones.
Irish Cream Pie
1 (3 ounce) box instant vanilla pudding
1 (14 ounce) can sweetened condensed milk
½ cup Irish Cream flavored coffee creamer
Graham cracker crusts
Whipped cream for garnish, optional
In a large mixing bowl, whisk together the pudding, sweetened condensed milk and Irish Cream for about two minutes. Pour mixture into pie crusts and refrigerate at least two hours before serving.
Garnish with whipped cream right before serving.
